Recipe of the Week: Chorizo Egg Caserrole

20131018-103427.jpgMy family loves breakfast for dinner so once a week, usually on Fridays, I make breakfast. It’s normal breakfast foods, eggs over easy, veggie sausage, pancakes, etc. Last week I decided to try something a little different.

I was grocery shopping and saw the Lightlife Smart Sausage, Chorizo Style and bought it not quite sure what I was going to do with it at the time.

When breakfast night came around, I pulled it out and incorporated it into a bake-in-the-oven egg recipe. I added red peppers, a little bit of cheese and….easy, delicious breakfast casserole. The recipe below is vegetarian but can be easily converted to a vegan recipe by substituting milk for soy or nut milk and the cheese for vegan cheese.

This recipe packs a lot of protein and is much lower in saturated fat when using the vegetarian sausage as opposed to real pork sausage. And in my opinion, you give up none of the flavor.

I was advised to put this on the list to make again soon.

INGREDIENTS

  • 12 Eggs
  • 1 package Lightlife Chorizo Style Sausage sliced
  • 3/4 Cup milk (soy, nut or hemp milk can be substituted)
  • Mexican style or cheddar cheese (dairy free can be substituted)
  • 1 Rep Pepper, diced
  • Salt and Pepper to Taste
  • 1 Tablespoon Olive Oil

DIRECTIONS

Preheat oven to 350 degrees. Heat the olive oil in a skillet. Add sliced sausage and diced red pepper. Stirring frequently. Heat until the peppers start to get tender and sausage begins to brown.

20131018-103509.jpgWhile that is cooking, whisk all eggs and milk together in a large bowl. Add salt and pepper.

Pour the egg mixture into a 13×9 pan lightly sprayed with non-stick cooking spray.

20131018-103445.jpgWhen sausage is lightly browned and peppers are tender, gently pour them into the pan, trying your best to disperse evenly. Slide into the pre-heated oven and allow to bake for about 30-35 minutes until the center is cooked through completely. Remove from the oven and allow to settle prior to serving.

Variation: If you would rather have the sausage ground, the links can easily be placed in a food processor and ground.

This is great served with a little bit of salsa on top. Enjoy!
